Sarah Pound, a trained nutritionist and mother, knows a thing or two about cooking healthy food in a busy household. In her latest cookbook, she focuses on easy weeknight dinners for those short on time and seeking something delicious yet fast and fuss-free. She also had some lunchbox ideas and sweet treats. With more than 80 recipes, there is plenty of inspiration for home cooks.
The standouts in our family included:
Lentils, chickpeas & avocado with goat’s cheese – a pleasing mix of earthiness and tanginess, a go-to salad.
Lemon pepper chicken – so simple, it only takes 10 minutes to prep and 20 minutes to cook. A winner at our place!
Creamy, garlicky mushroom pasta – as Sarah says, ‘comfort in a bowl, this dish is all about the rich flavour of mushrooms, butter and parmesan.’
Caribbean-style chicken curry with cucumber & coriander salsa – inspired by Thai beef bowls, but this time with chicken mince in the curry.
Pork chop tray bake with potatoes & brussels sprouts – a sweet and sour sensation.
And for something sweet, the lemon and passionfruit slice is a tangy and yummy treat.
The recipes are well set out, and the photographs are excellent. Go grab a copy. This cookbook is fabulous!
