The creative force behind Auckland's Mint Cakery has just released her second cookbook, and what a joy this pink-hued confectionery is! She generously shares her recipes, techniques and baking knowledge with home cooks. There are cakes, cheesecakes, cookies, hot desserts, festive bakes and tips on decorating and cake condiments. You even learn how to line baking tins properly. And there is a whole section on decorating, with everything from how to rocher, to decorating mini cakes to adding edible flowers for a garnish.

Standouts in our home were:

  • Citrus cake and all the options to turn it into something else as well: lemon meringue, chocolate orange, lemon raspberry, lime curd and coconut, lemon meringue two-layer cake, orange & poppy seed mini loaves, lemon passionfruit slab, lemon, boysenberry & toasted coconut cake, pineapple & lime cake with mint sugar. So many variations it is amazing!

  • One bowl chocolate cake. Great if you are short on time. Just throw it together and chuck in the oven.

  • Chocolate self-saucing pudding. It’s so easy to make, and the suggestion of raspberries adds lots of zing.

  • Lemon curd cheesecake – a dessert everyone will love!

  • Salted caramel cheesecake brownie – the salted caramel makes this brownie really special.

Excellent recipes and fabulous photography, this is a must-have for bakers.
