The Comfort Bake by Sally Wise

I’m not much of a cook, but I enjoy baking, so I approached The Comfort Bake with a great deal of interest. It promises good old-fashioned country cooking that is big on comfort and low on fuss. Just the kind of thing that appeals.

Arranged in the following sections: bite-sized beauties, cakes, slice and tray bakes, fabulous finishes, breads & buns, small savouries and large savouries, the book is easy to navigate.

The photography makes you feel hungry before you even begin to bake, and the recipes are easy to follow.

Here are recipes that are already standouts in our home:

Peaches & Cream Butterfly Cakes – a great twist on a popular butterfly cake.

Raspberry & Cream Sponge Fingers – reminds me of some of my nana’s baking!

Greek Lemon Syrup Cake – beautifully tangy!

Apple Lemon Delicious Pudding – lives up to the title – delicious!

Savoury Pull-Apart Loaf – by its very nature, it is perfect for pulling apart to eat.

Spinach, Goat’s Cheers & Roasted Tomato Tarts – tart goat’s cheese is perfectly counterbalanced with the sweetness of cherry tomatoes.

In her introduction, author Sally Wise says that baking ‘runs in the family; my great grandparents operated a bakery in Hobart.’ Thank you, Sally, for sharing the recipes you have created, influenced by your family, with us – they are truly wonderful, nourishing, and food that warms that heart.
