Protein has been a health buzzword recently, and this attractive recipe book focuses on high-protein, low-calorie meals that are tasty and good for you. A debut cookbook after her first recipe went viral in 2022, it includes rice paper spanakopita, sushi waffles, Big Mac fold wraps and miso eggplant chicken. Each recipe includes a nutrition panel that breaks down protein and calorie counts.
Recipes in our household that stood out are:
Crispy fish spring rolls with lemon-dill dipping sauce. This is a healthier version than fish n chips, what Victoria calls ‘fakeaway-friendly.’
Beef negimaki with a sticky glaze – a classic pairing of tender beef around crispy greens, with a glossy, sticky glaze.
Potato gem salad caesar-style – the classic caesar salad, with potatoes instead of croutons, and more protein. It’s a hearty meal.
Mexican-style street corn chicken salad – this is smoky, creamy and tangy.
Cheesy bolognese-stuffed mushroom cups – a twist on the classic bolognese.
Greek lemon & oregano lamb meatballs – herby and fabulous!
Cheesy chicken & potato bake – comfort food with higher protein, and arguably more delicious too.
The recipes are creative and a bit different, and Minell includes info about the benefits of protein. A great choice for health-conscious people who also like delicious food.
