Fitwaffle’s Baking It Easy by Eloise Head

Social media star, Eloise Head, aka Fitwaffle, has just released her first baking book. It’s bright and attractive and boasts more than 100 recipes.

Fitwaffle uses many prepared ingredients in her recipes, such as cookies and biscuits, chocolate hazelnut spreads like Nutella and chocolate bats like Snickers and Twix, but that allows her to create delicious recipes with only 3 or 4 or 5 ingredients.

Standouts include:

Cookies and Cream Fudge, using condensed milk, white chocolate, and Oreo biscuits.

Easter Fudge that uses Cadbury Mini Eggs – the photo is super cute, by the way!

Cookies and Cream Cake – one of her most popular recipes.

Stuffed Chocolate Muffins, using Nutella.

Fitwaffle has an entire section devoted to Mug Cakes, a truly fun and inspired idea.

Her traybakes are sublime, from Peanut Butter Blondies to Nutty Caramel Slice.

Then there is the section of ice creams, shakes and chilled desserts before enjoying the section on sweet breakfasts.

I’ve given a hint of the recipes in this book, but they are all simple and delicious. This is no-fuss baking. My only criticism? It’s much too hard to select which recipe to bake next. Currently, I have more than 20 post-it notes scattered throughout the book as I try to whittle down the next one to try out!
