This is the perfect baking book for anyone who might want gluten-free, nut-free, dairy-free or vegan options. Each recipe has the option of swapping ingredients out to make the recipe suitable for one or more of the above categories.

This is an attractive hardback with stunning photography, and the recipes are well laid out and easy to follow.

Standouts include:

Ricotta, pumpkin and sage loaf muffins – easy to make and truly delicious!

Quick soda bread – doesn’t require kneading or time to rise, so this bread isn’t time-consuming.

Lemon and blackberry layer cake – a sponge cake perfect for special occasions or just as a decadent treat!

Berry granola bars – as the author says, these are packed ‘with all the good stuff.’

Mint choc chip puddle puddings - are so delicious and they look impressive!

The Flexible Baker is an invaluable book for anyone who has to restrict their diet in some way due to an allergy, intolerance or other reason. There is no excuse now not to get baking.
